Ring's Snowballs
- 1 (8oz) pkg of cream cheese, softened
- 3/4 cup butter
- 1 cup powdered sugar
- 2 1/4 cups flour
- 1/2 teaspoon baking soda
- 1/4 teaspoon vanilla
- 1/2 cup chopped pecans
- Beat cream cheese, butter, sugar and vanilla in a large bowl at medium speed until well blended. Add flour, baking soda and nuts; mix well
- Chill the dough for about 30 minutes. Preheat oven to 350 degrees.
- Take 1/4 of the dough out of the refrigerator and form little balls. Work quickly as balls quickly become sticky in hot hands. Place balls on ungreased cookie sheet. Repeat with remaining dough.
- Bake cookies until light golden brown. About 14-16 minutes
- When balls are cool, roll in powdered sugar.
- Eat snowballs.
